    Artichoke Parmesan Dip (cold)

    List of Ingredients




    1 (14-oz.) can artichoke hearts, drained
    2 tbls. olive oil
    2 tbls. fresh lemon juice
    1 clove garlic, finely minced
    1/3 cup freshly grated Parmesan cheese
    1 tbl. chopped fresh parsley
    Freshly ground black pepper to taste



    Recipe



    1. Place drained artichokes in food processor and chop, but not too fine. You want to have some texture.
    2. Place chopped artichokes in bowl. Add olive oil, lemon juice, minced garlic, cheese, parsley and black pepper to taste.
    Serve on Italian bread, such as focaccia, or crackers.

    Makes about 11/3 cups.
