    Coconut Shrimp

    List of Ingredients




    1 lb. Large raw shrimp, peeled, deveined, butterflied (do not remove tail)
    1/3 C Flour
    2 Whole eggs
    2 C Shredded coconut
    Pinch Salt
    Oil for deep frying

    Orange Dipping Sauce:

    1 C Orange marmalade
    1 T Prepared horseradish
    1/4 C Dry sherry


    Recipe



    Beat eggs and the salt in one bowl. Place flour in a second bowl, and shredded coconut in third.
    Dredge the shrimp in the flour; dip in the egg mixture, then coat the shrimp well with the shredded coconut.
    Fry in 350 degree oil until golden brown.
    Serve with Orange Dipping Sauce.

    Dipping Sauce:
    Mix all ingredients in a blender.
    Serve at room temperature with Coconut Shrimp.
