3/4 C milk (regular or 2%)
1/3 C salted or unsalted butter
1/2 t salt
1 C flour sifted
4 large eggs
1 C (7 oz) finely diced Gruyere cheese (NO substitute)
1 egg beaten with 1/2 t salt (glaze)
6 T grated Gruyere cheese
Recipe
Preheat oven to 375 degrees F.
Butter pie plate (tart pan). Bring milk, butter and salt to boil, stirring
till butter melts. Remove from heat, add flour all at once and beat
vigorously with spoon until mixture pulls away from sides. Set pan over low
heat and stir one minute. Cool slightly. Add 3 eggs, 1 at a time beating
after each, add one more egg; beat enough into batter to form a shiny
mixture that just falls from spoon. Mix in 1/2 diced cheese. Spread batter
into
pan, bush top with glaze. Sprinkle with grated cheese and rest of diced
cheese. Bake until pastry puffs and is golden brown, approximately 35
minutes. Let cool a few minutes, then cut into thin wedges (pastry will
fall), serve warm or room temperature.
Serve as a party appetizer. Offer or garnish with sliced fresh pear and/or
apples and green grapes alongside.
