Potted Crab
List of Ingredients
8 oz Crabmeat, fresh or canned
1 Stick Butter
1/2 t Nutmeg
1/2 t freshly ground Black Pepper
Pinch Cayenne Pepper
2 T Lemon juice
2 thin slices of Lemon, cut into quarters
Parsley sprigs, for garnish
Recipe
Melt 1 oz of the butter in a saucepan and add the nutmeg, pepper and cayenne pepper.
If using canned crab, pick over and remove cartlidge. Break the Crabmeat gently with a fork and add it to the saucepan with the Lemon Juice.
Stir over a low heat until the Crabmeat is hot, but do not allow it to burn or brown.
Divide the mixture equally between 4 small ramekins or a small, shallow casserole dish and pack it down gently.
Place quarters of a Lemon Slice on the top of each dish of Crabmeat.
Heat the remaining Butter and pour over the Crabmeat, covering the tops completely.
Chill for at least 4 hours before serving. Place a sprig of fresh Parsley on top of each dish and serve with warm Toast Fingers or Crackers.
Serves 4
This is a quick and easy appetizer that takes less than 10 minutes, but it does have to be prepared ahead and chilled for at least 4 hours.
Nice first course or appetizer.
