These bruschetta have a scent of the Mediterranean about them, and the scallions make a welcome change from the more typical garlic. Add mozzarella cheese, if you wish, to make a more substantial snack.
4 to 6 ripe plum tomatoes
4 scallions, sliced fine
salt and black pepper
4 tablespoons olive oil
8 to 12 slices French bread
Recipe
1. Slice the tomatoes and place them in a bowl with the scallions. Season well, then add the oil and leave for 20 minutes, stirring from time to time.
2. Toast one side of the bread under a broiler, then turn it over and pile on the tomatoes and scallions. Reserve the olive oil. Broil until the tomatoes start to blacken - make sure all the bread is covered or it will burn.
3. Spoon the oil over the bruschettas and garnish with a small lettuce leaf or other greens to serve.
