Brined Pork Roast

BRINE a boneless pork roast in 1/2 C kosher salt, 1/4 C white sugar, 1/4 C brown sugar, 1 smashed garlic clove and 1 bay leaf for 1 hour. Drain and pat dry.
Cut the roast 3/4 the way in half and slather w/ boursin cheese, then lay baby spinach leaves, minced garlic, a little thyme, black pepper and salt.
Roll up, tie with string, and roast on a rack.
Serve with:
A reduction of pureed peaches in heavy syrup, with some unsalted butter and a little white wine. Spoon over the slices of pork.
