    Aunt Dolly's Cool Rise Italian Bread

    Aunt Dolly, of course.

    List of Ingredients




    6 1/2 C Flour
    1/2 C Very Warm Water
    2 Pkgs Yeast
    1 T Sugar
    2 t Salt
    1 3/4 C Very Warm Water
    1 T Butter



    Recipe



    Combine Yeast with 1/2 C Water and let stand 5 minutes to proof. Add that to 1 3/4 C Water, Salt, Sugar, and Butter.
    Stir in 2 C Flour; beat with electric mixer until smooth.
    Add 1 more cup Flour and beat vigorously with wooden spoon until smooth. Gradually add more Flour to form soft dough.
    Knead in more Flour if needed. Knead 5-10 minutes. Place dough in greased bowl, cover with wax paper and tea towel.
    Let rise 20 minutes.
    Divide dough in two. Roll each ball jelly roll fashion, then roll into loaves. Place each loaf on greased cookie sheet. Oil tops of loaves, cover and refrigerate 2-24 hours.
    Bring to room temperature, then bake @ 400* 30-40 minutes.
    Yield: 2 Loaves
