    Mom's Escarole & Tomatoes

    Hands down, my favorite veggie. I also prepare this using zucchini rather than escarole.

    List of Ingredients




    1 Head of Escarole, washed and cut up
    1 Large Onion, sliced
    2 T Olive Oil
    1 t Minced Garlic (from a jar or one clove fresh)
    1 16 0z.can Stewed Tomatoes
    Parmesan Cheese



    Recipe



    Cut and rinse Escarole, making sure you get any sand out of it, and put it in a saucepan to cook. Use your own judgement on the time.

    In the meantime, slice Onion and cook it in a microwave safe pan in Olive Oil, for 3 minutes. Add Minced Garlic and Stewed Tomatoes and cook 3 minutes longer.

    After the Escarole has been cooked, add it to the Tomato mixture and heat it a few minutes more for the mixture to "marry".

    You can add Parmesan Cheese on top and serve with a crusty bread to sop of the juices.

    Yum! This is one of my favorites.
    Especially good with broiled Pork Chops or Chicken.
