1/2 C (Corn) Oil
1/4 C fresh Lemon Juice
1 t Worcestershire Sauce
1 t Salt
1/4 t freshly Ground Pepper
1 t Oregano
1/2 Chicken, intact
Recipe
Marinate the chicken all day in a Ziploc bag. Roast (chicken AND marinade) COVERED @ 375* about 1/2 hr. Uncover, continue roasting 15 minutes @ 350*, then add about 1/4 C water and roast 15 minutes more.
Serves 2.
The pan juices are to die for and the chicken is as moist as you can possibly imagine. Mashed potatoes are a wonderful partner for this.
