Pineappleade

2 to 2 1/2 cups cut-up fresh pineapple
2/3 cup sugar
2/3 cup water
4 or 5 strips fresh lemon peel
2/3 cup fresh lemon juice
Ice
Sparkling mineral water or cold water
Lemon or lime slices for garnishRecipe
Puree pineapple in blender.
Bring sugar, water and lemon peel to a boil in saucepan. Simmer 5 minutes and discard peel.
Add lemon juice and combine with pineapple.
Store, covered, in jar in refrigerator until ready to use.
Pour 1/2 cup fruit base over ice in 10-ounce glass. Fill with sparkling or plain water. Garnish with lemon or lime slices.
Makes about 3 1/2 cups base (6 to 8 servings).
