    Cranberry Banana Bread*

    List of Ingredients


    3 RIPE BANANAS
    3/4 C SUGAR
    1 C FRESH CRANBERRIES, Chopped
    1/2 C CHOPPED WALNUTS, opt.
    1 EGG
    1/3 C BUTTER, MELTED
    1 1/2 C FLOUR
    2 t BAKING POWDER
    1/2 t BAKING SODA
    1/2 t SALT
    CRYSTAL SUGAR TO SPRINKLE ON TOP, Opt.

    Recipe

    PREHEAT OVEN TO 375*
    MASH BANANAS IN MEDIUM BOWL.
    ADD NEXT 5 INGREDIENTS AND STIR WELL.
    ADD FLOUR, BAKING POWDER, BAKING SODA AND SALT.
    MIX WELL.
    SPOON BATTER INTO GREASED OR LINED MUFFIN TINS OR LOAF PAN. SPRINKLE WITH CRYSTALINE SUGAR, IF DESIRED.
    BAKE 15-20 MINUTES (muffins) or
    45 MINUTES FOR LOAF.

    Note:
    I used 2 LG bananas, omitted the nuts and baked this in 4 small loaf pans.
    Doubles nicely.
    Nice flavor combo. Quick & easy to make.
