Fat Free Lemon Bread
List of Ingredients
3/4 C all-purpose flour
3/4 C whole wheat flour
2 t baking powder
1/2 t ground cinammon
3 egg whites (or equivalent egg substitute)
1/4 C firmly packed brown sugar
1 C cooked kidney beans, drained (6 ounces)
1/2 C orange juice
2 T plus 2 t unsweetened applesauce
1 t vanilla extract
1 t lemon extract
1 t grated fresh lemon peel
Recipe
Preheat oven to 350*.
Spray an 8x4 loaf pan with nonstick cooking spray.
In a large bowl combine both flours, baking powder, and cinnamon.
Mix well.
In a blender container, combine remaining ingredients. Blend until mixture
is smooth and beans are pureed. Add to dry mixture. Mix until all
ingredients are moistened. Place mixture in prepared pan.
Bake 35-40 minutes, until a toothpick inserted in the center comes out
clean.
Cool in pan on a wire rack for 5 minutes, then turn out onto rack to finish
cooling.
