    4 1/2 to 4 3/4 C all purpose flour (one cup could be whole wheat)
    1 package dry yeast
    1 1/2 t sugar (or honey)
    1 1/2 t salt
    1 3/4 C water
    2 T oil
    1 T sesame seeds (opt)

    Recipe



    Combine 2 C flour, yeast, sugar, and salt; mix well. Heat water and oil until warm (120 to 130 degrees). Add to flour mixture. Blend at low speed until moistened; beat 3 minutes at medium speed. By hand, gradually stir in enough of the remaining flour to make a firm dough. Knead on a floured surface until smooth and elastic, about 10 minutes.
    Cover dough with plastic wrap, then a towel. Let rest 20 minutes on floured surface. Punch down dough. Divide into 12 equal parts. Shape each part into a smooth ball. Place on floured surface leaving space between each ball. Cover and let rise 30 minutes. Preheat oven to 500. Roll each ball into a six inch circle. Place 3 circles at a time directly onto the oven rack. Bake until puffed and top just begins to brown (about 3 minutes). Cool on racks.
    Put a cooling rack on the oven rack to make a grid for baking. It gives them more support. While you bake three, roll out another three.
    Moosewood says: Remove from the oven, and wrap the breads in a clean, slightly damp tea towel, then place in a brown paper bag, closed up, for 15 minutes. This will keep the breads supple. Sounds like a good idea to me.
