    Brown Sugar & Pepper Glazed Bacon

    1 # thick-sliced bacon
    1 T Dijon mustard
    3 T brown sugar
    2 t balsamic or cider vinegar
    3/4 t coarse-ground black pepper






    Recipe

    To pre-cook the bacon: Preheat oven to 350 degrees (F). Lay out the bacon on a jelly-roll pan. Bake in oven until about three-quarters done. (I used Hormel thick-sliced bacon, which had about 14 slices in the pound, and it took 24 minutes to par-bake it.) Let bacon cool slightly.
    Meanwhile, in a very small saucepan or in the microwave, combine and heat mustard, brown sugar, vinegar and pepper until smooth and warmed.
    Remove bacon to paper towels to dab off grease, then lay out bacon in a single layer on another jelly-roll pan. Using a pastry brush, brush each slice of bacon with some of the glaze.
    Preheat oven to 425 degrees (F). Bake bacon for about 6 to 8 minutes or until crispy and glazy. Serve immediately.
