    Eggs in Buttercups

    Turning something plain into something fancy with little effort.

    List of Ingredients

    12 slices fresh Bread
    melted Butter or regular Margarine
    8 Eggs
    2 t Salt*
    1 t Pepper*
    1/4 C heavy Cream*
    crisp-fried Bacon Bits* (optional)


    Recipe

    Trim crusts from bread. (Turn trimmings into bread crumbs for another use.) Press slices of bread into muffin-pan cups. Brush with butter. Bake in a 400º oven for 20 minutes.
    Beat eggs until fluffy. Add salt, pepper, cream and bacon. Scramble until desired doneness is reached. Spoon into toast cups. Garnish with additional bacon. Serve immediately.

    Note: *The amounts for salt and pepper are just guidelines. Use your own judgment as to how much of either you want on your eggs. Cream can easily be replaced by half-and-half, milk or water.
    The bacon can be replaced with some leftover Ham, Spam,
    Sausage, Cheese, a little Bell Pepper and Onion ... whatever you like in your scrambled eggs. The main thing is to serve the eggs in the toast cups.
