German Apple Pancake
List of Ingredients
3 eggs
3/4 cup all purpose flour
1/2 t salt (optional)
1 cup milk
7 T butter
1 tart sliced Washington apple
2 T sugar
Recipe
Preheat oven to 425 degrees. Make a batter of the eggs, flour, salt, and milk and blend until smooth. Heat 3 tablespoons of butter in a heavy skillet, until bubbly, add apple and saute slightly, (don't burn). Pour batter into hot skillet and put in the oven. Bake until edges are browned and crisp and cake is puffed, about 20 minutes. Can be sprinkled with sugar, or served with apple sauce or pear sauce.
