List of Ingredients
1/4 C light brown sugar (firmly packed)
1/4 C chopped pecans
1 t cinnamon
1 1/2 C flour (all purpose)
2 t baking powder
1/4 t baking soda
1/2 C sugar
1/4 t salt
1 large egg
3/4 C milk
1/3 C veggie oil
1 T orange zest (opt)
Recipe
PREHEAT OVEN TO 400*
Combine first 3 ingredients.
Stir flour and next 4 ingredients in large bowl.
Make a well in center of mixture, add orange zest (opt.).
Stir together egg milk and oil, add to flour mixture and stir just until moistened.
Place paper baking cups in muffin pans and spoon about 1 Tbsp of batter into each (12 cups).
Sprinkle evenly mith about half of the brown sugar mixture and evenly disperse remaining batter.
Top with remaining brown sugar mixture.
Bake at 400* for about 24 minutes or until lightly browned.
