    Easy Pineapple Upside Down Cake*

    Jiffy cake mix box

    Recipe Introduction

    SO easy! Traditionally, this is made in an iron skillet. Feel free to double the recipe by using a full size boxed cake mix.

    List of Ingredients

    1/4 C Butter
    1/2 C Brown Sugar
    Canned Pineapple (sliced or crushed)
    Maraschino Cherries
    1 small pkg. Yellow Cake Mix (One layer such as Jiffy brand mix)

    Pecan Halves, opt.

    Recipe

    Heat oven to 350º. Melt butter in 8" x 8" x 2" pan or 9" round pan. Sprinkle brown sugar over margarine. Arrange pineapple slices with cherries in center of slices over brown sugar in pan.
    Prepare cake mix as directed on box substituting pineapple juice for liquid. Pour batter over pineapple, brown sugar mixture in pan.
    Bake 35 to 40 minutes. Cool cake 5 minutes in pan before inverting onto serving plate. Let stand 1 minute before removing from pan. Serve warm with whipped cream.

    You can also add pecan halves to bottom of pan before pouring in batter.
