    Fruit Swirl Coffee Cake

    List of Ingredients




    3/4 C sugar
    1/4 C butter, softened
    1/4 C shortening
    3/4 t baking powder
    1/2 t vanilla
    1/2 t almond extract
    2 eggs
    1 1/2 C all-purpose flour
    1 jar (10 ounces) any flavor fruit preserves

    GLAZE
    1/2 C powdered sugar
    1/2 to 1 T milk

    Recipe



    Heat oven to 350F. Generously grease 9 × 9 × 2-inch. Beat
    sugar, margarine, shortening, baking powder, vanilla, almond extract and eggs in large bowl on low speed, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Stir in flour. Spread 2/3 of the batter in pan. Spread preserves over batter. Drop remaining batter by tablespoonfuls onto preserves.
    GLAZE:
    Mix ingredients until smooth and of drizzling consistency.
    Bake about 45 minutes. Drizzle Glaze over warm coffee cake.
    Serve warm or let stand until cool.
