    Penn Dutch Raisin Cake

    List of Ingredients

    1 # Raisins, boiled in
    2 C Water

    4 C Flour
    1/2 C Shortening
    2 C Sugar
    1 C Water
    1/2 t Allspice
    1 T Baking Soda

    Recipe

    Boil raisins in 2 C water for 15 minutes. When cool, add the shortening, 1 C water and baking soda.
    Mix well.
    In a large bowl, mix flour, sugar and allspice. Add raisin mixture and stir well.
    Put mixture in a greased 9x13 pan and bake @ 375 35-40 minutes.
    When completely cooled, sprinkle with Confectioner's Sugar.
    This recipe can successfully be cut in half and baked in an 8x8 pan.
    This is a good snack cake, plus uses NO eggs!
