Candy oil is strong but extracts make a milder, sweeter candy. Beware of innamon oil. You will smell cinnamon for days and you can get a slight but painful chemical burn if you stand over the hot mixture when adding thecinnamon. It is best to sift a light coating of powdered sugar
over the cooled candy, then break into pieces and after breaking into pieces put in a plastic bag with a little powdered sugar to recoat. This
candy makes a very nice gift placed in any clear glass jar. Beware, mints
will overpower milder flavors if stored together. Vanilla extract makes a
tasty vanilla candy. Also, chocolate extract or oil makes a candy that is just like a chocolate tootsie pop, without the tootsie. The pharmacy carries a wide variety of flavored oils and always gets these in just in
time for holiday candy making. These oils can also be used when making your
own potpourri or for scenting pine cones.
