    Pumpkin Fudge

    List of Ingredients





    1 cup milk
    3 cups sugar
    3 tablespoons light corn syrup
    1/2 cup pumpkin puree, fresh or canned
    1/2 teaspoon cinnamon
    1/2 teaspoon allspice
    4 tablespoons margarine
    1 teaspoon vanilla
    1/2 teaspoon ground ginger (optional to make spiced pumpkin fudge)

    Recipe




    Combine milk, sugar, corn syrup and pumpkin in large saucepan. Cook over medium heat until boiling, approx 8 minutes Reduce heat to simmer and cook, stirring often, until mixture reaches softball stage, approx 45 minutes.(When mixture is stirred, the bottom of the pan is clearly visible for a second).

    Remove from heat. Beat in spices, vanilla and margarine.

    Pour into buttered dish and cool.
