    Chicken & Artichoke Casserole

    List of Ingredients

    3 # Chicken pieces (breasts and thighs)
    6 T Butter
    1 1/2 t Salt
    1/2 t Paprika
    1/4 t Pepper
    1 can (8 oz.) whole mushrooms, drained
    2 T Flour
    1 C Chicken Broth
    1/4 C Dry Sherry or Dry White Wine
    1 can (14 oz.) Artichoke Hearts, drained

    Recipe

    Melt butter in large skillet. Season chicken with salt, paprika, and pepper and brown on all sides. Place chicken in a casserole large enough to hold it in a single layer. Saute' mushrooms in drippings remaining in pan. Blend in flour and cook for about 2 minutes. Add chicken broth and wine and cook until thick.
    Place artichokes in casserole on top of the chicken. Pour sauce over all. Bake uncovered at 375 for 45 minutes.
    Serves about 4.
