    Italian Cheesecake

    1 1/2 # ricotta cheese
    1 (8-oz) package cream cheese
    3 large egg yolks
    1/2 C granulated sugar
    2 T brandy
    2 T vanilla extract
    2 graham cracker pie crusts
    1/4 C chocolate syrup

    Recipe

    In a large mixing bowl, combine together ricotta cheese, cream cheese, egg yolks, sugar, brandy, and vanilla, beating until well-blended.
    Pour into two 9" graham cracker pie crusts and drizzle with chocolate syrup.
    Bake in a 350°F (175°C) oven for 30 minutes, or until the center is set. Makes 16 servings.
