Horn & Hardart Mac & Cheese
This brings nice memories from my NYC childhood. The recipe is from The N.Y. Cookbook, by Molly O'Neill.
List of Ingredients
4 T Butter
4 T Flour
3 C Milk
1 t Salt
Dash White Pepper
Dash Cayenne
2 C White Cheddar, shredded
1/2 # Elbow Macaroni, cooked & drained
1/2 C Canned Diced Tomatoes, drained
1 t Sugar
Recipe
Melt butter, whisk in flour. Add milk, salt, cayenne and pepper, stirring continuously until thickened (8 -10 minutes). Add cheese and continuing cooking until cheese melts. Remove from heat.
In a bowl, combine cooked macaroni and sauce. Stir in tomatoes and sugar. Transfer to lightly greased casserole and bake @350* 30 -40 minutes.
Serves 4 - 6.
