Apricot-Date Bars
List of Ingredients
3 eggs
1 C honey
1 t vanilla
1 1/2 C sifted flour
1 t baking powder
1/4 t salt
1 C finely cut dried apricots
1 1/4 C (8 oz.) pitted dates, chopped
1 C chopped nuts
Confectioners' sugar
Recipe
Beat eggs with a mixer until light and lemon-colored. Beat in honey and vanilla until blended. Stir in flour, baking powder, salt, apricots, dates and nuts. Place dough in a greased, 9-by-13-inch baking pan. Bake at 350 degrees for about 45 minutes, until golden. Cool in pan. Cut into bars and roll in confectioners' sugar.
