Apricot Bars
List of Ingredients
1 1/2 C sifted flour
1 t baking powder
1 C packed brown sugar
1 1/2 C quick oats
3/4 C (1 1/2 sticks) butter
1 1/2 C apricot jam
Recipe
In a large bowl, whisk together flour, baking powder, brown sugar and oats. Cut in butter as for pie dough, until crumbly. Pat two-thirds of mixture in the bottom of a greased, 9-by-12-inch pan. Spread with jam. Cover with remaining crumb mixture.Bake at 350 degrees for about 30 minutes, until golden. Cool. Cut into bars.
