4 C All-purpose Flour
1 t Baking Powder
1 t Baking Soda
1/2 t Salt
1/4 t Nutmeg
1 C Sugar
1 C Light Brown Sugar
1 C Butter
3 Eggs
2 t Vanilla extract
Raisin Filling
3/4 C sugar
1 T cornstarch
1 C water
2 C seedless raisins
1 t vanilla extract
Recipe
Mix flour, baking powder, soda, salt and nutmeg. Mix in sugars. With pastry blender or 2 knives cut in butter until particles are fine.
Beat eggs and vanilla; add to flour mixture; mix thoroughly with fork to smooth dough. Chill several hours or overnight until firm.
Divide dough into 3 portions. Work with one at a time leaving the rest in the refrigerator. Roll to 1/8" thickness, cut with 2" floured cutter. Put scant teaspoonful of filling on center of one circle. Top with another circle. Press edges to seal. Bake 1 1/2" apart on ungreased cookie sheet in a 375° oven until brown--10-12 minutes.
Filling: Mix sugar and cornstarch together. In saucepan heat water and raisins until boiling. Add sugar mixture, boil gently, stirring until liquid is clear and slightly thickened and raisins are plump. Cool, then stir in vanilla.
