    Thumbprint Cookies

    List of Ingredients





    1 cup butter
    1/2 cup brown sugar
    2 eggs
    1 tsp vanilla extract
    2 cups flour
    1/8 tsp salt
    1 cup chopped pecans
    1/2 cup apricot jam

    Recipe




    Preheat oven to 300*. Separate eggs, reserving whites. Cream
    butter, egg yolks, vanilla and sugar until well blended. Stir in flour and
    salt, mixing well. Roll dough into walnut-size balls. Roll in egg white
    and then in chopped nuts. Place on greased baking sheets. Bake for 5
    minutes; remove from oven. Make an indentation in the top of each cookie
    with your thumb and fill with a bit of apricot jam. Return cookies to oven
    and bake an additional 8-10 minutes or until lightly browned and set.
