Turkey Tortiere (Canadian Meat Pie)

A Double crust Pastry
2 # Ground Turkey Sausage or Ground Turkey
3 med. Onions chopped
1 clove Garlic minced
1 t Salt
1/4 t black Pepper
1/4 t Allspice
1 1/2 C seasoned, prepared mashed Potatoes
Recipe
In a skillet, saute the onions in some oil until translucent. Add broken up ground turkey meat and stir and cook with a fork until turkey loses its pink color. Blend in mashed potatoes and seasonings. Mixture should be fairly thick, never loose or runny. Cool.. Place mixture in a 9 or 10 inch pie pastry lined deep pie pan.. Fill with cooled turkey mixture. Add top crust and slash in several palces so steam can escape. Crimp edges decoratively. Brush top crust with a mixture of 1 egg yolk mixed with 2 t water. Bake in a preheated 375 F oven until crust is golden. Cool on rack to warm. Serve warm or at room temperature. Reheats well the following day. Yield: 6 servings.
Note: typically ground pork is used in true tortiere recipes. Turkey is a tasty substitute.
