    Blackened Redfish

    List of Ingredients




    1 small onion, finely minced
    2 cloves garlic, minced
    1/2 teaspoon thyme
    1 teaspoon paprika
    1 teaspoon black pepper
    1 teaspoon cayenne
    1 tablespoon salt
    1/4 cup peanut oil
    6 (6 to 8oz.each) redfish fillets or any strong textured fish
    2 sticks of butter

    Recipe



    Combine onion, garlic, thyme, paprika, pepper, cayenne, salt and oil. Blend into a paste. Rub the fillets
    with the paste. Heat a wide heavy skillet (like a cast iron skillet) until it's smoking hot. Lay some of the fillets in the skillet and
    cook about 3 minutes on each side or until fish is cooked through and blackened.
    Keep fish warm while cooking all the fillets. Put the butter into the same skillet and melt. Scrape up the
    blackened herbs with wooden spoon.
    Pour sauce over fish.
    Serves 6.
    This produces a lot of smoke, so turn on the vent and open a window!
    This is one of my favorite fish recipes.
    Serves nicely with parslied red potatoes and a green veggie.
