Grilled Whole Fish
List of Ingredients
3 pounds whole fish (1 or 2 fish) such as salmon, snapper, striped bass or trout
2 tablespoons minced garlic
1/2 cup lime juice or lemon juice
1/2 cup olive oil
Salt and freshly ground black pepper, to taste
12 sprigs fresh thyme or 1 tablespoon dried thyme
Recipe
Make several deep slits in each side of fish.
Mix garlic, lime or lemon juice and olive oil.
Brush fish inside and out with mixture, working some into the slits.
Season fish inside and out with salt and pepper. Place half of the thyme in the cavity of the fish. Cover the fish with plastic wrap and place in refrigerator for a half-hour.
Meantime, prepare gas or charcoal grill. Just before placing fish on grill, sprinkle remaining thyme over briquettes.
Grill fish over medium heat for about 10 minutes per side or until fish is opaque throughout, basting frequently and turning just once.
Serves 4.
