Marinated Swordfish*

List of Ingredients
1/4 C Lime Juice
2 T Olive oil
1 T Minced fresh herbs
-(dill, rosemary,
-cilantro, or thyme)
1/2 t Garlic; minced
1 pn Pepper
3 tb Balsamic Vinegar
3 T Olive oil
2 t Shallot or onion; minced
1/2 t Dijon mustard
1 pn Pepper
1/4 C dry white wine
2 t fresh Ginger, minced
2 t Green Onion, minced
1 pn Dried Red Pepper Flakes
Recipe
Stir together the chosen marinade ingredients in a small bowl and pour the marinade evenly over the swordfish in a shallow glass dish. Marinate for 15 to 30 minutes, turning once or twice, just before cooking. Acids in contact with the fish for long periods toughen the flesh.
