List of Ingredients
l T Olive Oil divided
l/4 C Onion,diced
l Garlic clove, minced
l/2 C Green Pepper,diced
3/4 C canned tomatoes, diced
1 T White Wine (opt.)
4 pitted Black Olives, sliced
10 oz Cod fillets
Dash each Salt and Pepper
Garnish: 2 tsp chopped fresh parsley
Recipe
In l QT. saucepan heat l t oil: add onion and garlic and saute until onion is softened. Add green pepper and saute 3 minutes longer. Add tomatoes, wine, and olives. Cover and let simmer, stirring occasionally, for 10 minutes. Sprinkle both sides of cod fillets with salt and pepper. In 9" skillet heat remaining 2 t oil. Add fish and cook for 3 - 4 minutes. Turn fish over and top with vegetable mixture: let simmer until fish flakes easily when tested with a fork and vegetables are hot..about 3 minutes. Transfer to warmed plate and serve.
Yields 2 servings.
