Fruit Cordials
List of Ingredients
1-1/2 cups sugar
1 cup water
750-ml bottle of vodka (3-1/2 cups)
Orange or Lemon Cordial:
Zest from 3 oranges or 4 lemons
Banana Cordial:
1 Banana, peeled and thinly sliced
Mango Cordial:
2 ripe mangoes, peeled, pitted and chopped
Recipe
In a small saucepan heat together 1-1/2 cups sugar and
1 cup water until sugar is dissolved. Remove from heat
and cool. Pour sugar syrup into 2 quart glass jar.
Add desired fruit and 750-ml bottle of vodka (3-1/2 cups);
stir gently. Cover the jar with a tight fitting lid or
cork and let steep in a cool place for recommended times
for each fruit.
After steeping, using a wire strainer, strain liquid
through several layers of cheese cloth or coffee filters
into a large bowl. Using a funnel, transfer liquid to a
bottle. Seal and store at room temperature. Makes about
5 cups.
Orange or Lemon Cordial
With a sharp knife or peeler, remove the zest or orange
or yellow layer from three oranges or 4 lemons taking care
to avoid the bitter white layer. Reserve fruit for another
use. Steep for three weeks in a cool place.
Banana Cordial
Peel and thinly slice 1 ripe large banana and steep for
one week in cool place.
Mango Cordial
Peel, pit and chop 2 ripe mangoes; steep for 1-2 weeks.
