    I cut this out of a magazine years ago and have prepared it countless times.

    List of Ingredients




    14 Plum Tomatoes, peeled* and chopped
    2 handfuls of Fresh Basil Leaves
    1 Clove Fresh Garlic, minced
    1/2 # Reduced Fat Mozzarella, shredded
    1 T Olive Oil
    10 oz. Fusilli (Corkscrew pasta)

    Recipe



    *Drop tomatoes into boiling water for about 10 seconds, then peel and chop.
    Mix tomatoes, basil, garlic and cheese with oil. Let stand at room temperature at least 3 hours.
    Cook fusilli in boiling salted water. Drain. Add tomato sauce to hot fusilli and toss well.
    Serves 5
