1/2 C salad (corn) oil
1/4 C fresh lemon juice
1 t Worcestershire
1 t salt
1/4 t fresh ground pepper
1 t oregano
1/2 chicken, intact
Recipe
Marinate the chicken all day in a ziploc bag. Roast (chicken AND marinade) COVERED @ 375* about 1/2 hr. Uncover, continue roasting 15 minutes @ 350*, then add about 1/4 C water and roast 15 minutes more.
Serves 2.
The pan juices are to die for and the chicken is as moist as you can possibly imagine. Mashed potatoes are a wonderful partner for this.
