Harper's Pork Chops With Tomato Rice

1. Season Pork Chops with Garlic Powder, S & P. Sear in very hot skillet (do NOT add oil). Cook about 15 minutes. Remove chops from pan and set aside.
2. In casserole, prepare Minute Rice as directed on box using a Chicken Bouillon Cube in the water or Chicken Broth.
3. Into the skillet, pour a 1# can cut up Tomatoes (reserve juice), dried minced Onion, S & P, Garlic Powder, a dash each of Basil & Oregano, and a pinch of Sugar. Gently simmer to marry flavors.
4. Pour juice from Tomatoes over Rice in casserole. Lay Chops on top of rice.
5. Bake @ 350* about 30 minutes. or until Chops are thoroughly cooked.
I like grated Parmesan Cheese on this at serving time.
I suppose you could add minced green pepper or use Rotel Mild Tomatoes in place of regular canned Tomatoes..
