Italian Sausage with Polenta
List of Ingredients
1 # Italian Sausage, mild or sweet
1/2 C Farina
3 C Water
1 t Salt
2 Eggs, separated
2 T Butter
Prepared Tomato Sauce
Grated ParmesanRecipe
Bring 3 C Water to boil in saucepan; add 1 t Salt and Farina.
Reduce heat and cook 5-8 minutes, stirring often. Remove from heat.
Beat Egg Yolks well. Beat Egg Whites stiff.
Add Yolks to Farina. Add Butter and 2 T Parmesan. Fold in Egg Whites.
Pour into shallow greased pan or pie plate.
When slightly cooled, cover with waxed paper and refrigerate 4-12 hours.
Cut into squares or dice. Turn into shallow pan and cover with prepared Tomato Sauce and more Parmesan.
Bake 30 minutes @ 375*.
Meanwhile, prick and bake Sausage until browned.
Serve with Polenta.
