Juicy Pork Chops

1. Buy a pork chop at least 1" thick. I prefer boneless loin chops but any will do.
2. Preheat your oven to 450F.
3. Salt, pepper and garlic powder your chops to taste.
4. Preheat an oven proof skillet (cast iron) until smoking hot. Add 2 parts Canola oil to 1 part unsalted butter (2 T, 1 T)
5. Sear the Chops until they are well browned (2-3 minutes).
6. Transfer pan to oven and cook an additional 5 minutes.
7. The chops should be slightly pink inside nice and brown on the outside and definitely moist.
Recipe
For a sauce: Saute 3/4 # fresh mushrooms in the butter-oil mixture until they give off all of their liquid and start to brown. Remove mushrooms from pan. Pour 1/2 C heavy cream and 2 oz white wine (Chardonnay) into pan and bring to a boil. Lower heat to a simmer and cook until it reduces to approx 1/2. Thicken with cornstarch/water if necessary.
Return mushrooms to pan, season with salt and freshly ground pepper, bring back to a boil and serve over the chops.
