    Pork Chops, Italian

    List of Ingredients

    2-4 Strips Lean Bacon, snipped in strips
    4 Lean Pork Chops
    Garlic Powder
    Onion Powder
    Black Pepper
    1# Can Stewed Tomatoes, Italian Flavored*
    1 4oz Can Mushrooms, drained
    1 T Dry Onion Flakes or Dry Onion Soup Mix

    Recipe

    Season Chops with Garlic & Onion Powders and Pepper. In a large skillet, saute Bacon until cooked but not browned; Push to one side and add chops. Brown on both sides. Add Tomatoes, Mushrooms and Onion Flakes. Cover and simmer until Chops are fork tender, about 1 hour.
    If you think its too juicy at end of cooking time, uncover and allow to simmer another 15 minutes until some (not all) of the juice evaporates. You'll want 'some' to ladle over the Whipped Potatoes, though. :-)
    Serve with Whipped Potatoes and Sauteed Fresh Spinach.

    Note: * I use DelMonte Italian Style Stewed Tomatoes for this. If not available, use regular Stewed Tomatoes, and add some Italian seasonings such as Oregano and Basil.
