Fern's Kugel*
List of Ingredients
8 oz Egg Noodles
3 eggs, well beaten
1/4 C Butter
8 oz Sour Cream
1 1/2 C Cottage Cheese
Cinnamon Sugar, to taste
Salt & Pepper
Recipe
Cook, drain and rinse egg noodles and return to pot. Add eggs, sliced butter, sour cream,
cottage cheese and salt and pepper.
Pour 1/2 of this mixture into a buttered 8 x 8 dish. Sprinkle with desired amount of
cinnamon sugar. Top with remaining noodles. Sprinkle with more cinnamon sugar and dot
with additional butter.
Bake 45 minutes @ 375* or until browned and crisp on top.
Cut in squares to serve.
Goes especially well with roast pork or baked ham.
Note:
Fat and calorie laden, certainly not for people who are watching their cholesterol, but
delicious, nonetheless.
I imagine you could substitute No Yolk Egg Noodles, egg substitute, margarine instead of
butter, lowfat cottage cheese and non fat sour cream for the original ingredients. I never
have, but I can't see that it would make a major difference in the outcome taste-wise. I
usually make this for special occasions such as holidays.
