    Roasted Peppers*

    List of Ingredients

    As many Peppers of choice, as needed or desired
    Olive Oil
    Sliced, minced or crushed Garlic, to taste
    S & P, to taste
    dash Oregano

    Recipe

    I use Cubanaja Peppers for this, but any sweet pepper works fine. Cubanaja peppers are a long, slender, light green, sweet pepper.
    Place peppers directly over heat source (gas or electric stove or grill) and char until completely blackened.
    Remove to bowl or container with a lid. Cover tightly and allow to steam about 15 minutes.
    Under a drizzling water faucet, gently rub or slide skins off the peppers.
    Core, seed and slice peppers into strip and place in a bowl.
    Drizzle with Olive Oil; season with Garlic, S & P and Oregano to taste.
    Wonderful with antipasto, on sandwiches or as an accompaniment to Italian Sausages.
