    Homemade Gnocchi (Potato Dough Pasta)

    List of Ingredients




    1 1/2 # Mealy Potatoes (4 Lg)
    2 Unbeaten Eggs
    2 1/2 C Flour

    Recipe



    Peel, boil, drain and mash Potatoes. Measure out 3 C. Add Eggs, mixing well. Add Flour and mix. Remove to heavily floured board or surface and knead until smooth, adding more Flour if necessary.
    Roll to 1/4" thickness by 4" wide. Cut into 1/4 - 1/2" strips. Cut strips into 3/4" pieces. Sprinkle with Flour and press with back of fork to flatten center slightly.
    Allow to dry 1 hour.
    Cook in boiling, salted water until tender, 10 minutes or so, stirring occasionally.
    Drain and serve with your favorite Tomato Sauce and freshly grated Romano Cheese.

    This is a heavy, chewy Pasta. A crisp green Salad would top this meal off nicely. Add Meatballs on the side, if you're so inclined.
