14 manicotti tubes
2 (15 oz.) containers ricotta cheese
2 C mozzarella cheese, divided
1/2 C grated Parmesan cheese, divided
2 eggs
2 T fresh parsley, chopped
salt and pepper to taste
1 1/2 C spaghetti sauce, preferrably homemade
Recipe
Cook pasta according to package directions; drain. Lay flat on foil to cool.
In large bowl, combine ricotta cheese, 1 1/2 cups mozzarella cheese, 1/4 cup Parmesan cheese, eggs, parsley, salt and pepper. Pour a thin layer of spaghetti sauce on the bottom of a 13x9 inch baking pan.
Spoon cheese mixture into each pasta tube. Put into baking pan. Pour spaghetti sauce over filled pasta; sprinkle with remaining mozzarella and Parmesan cheeses.
Cover with foil and bake at 350 degrees for 35 minutes.
