Pasta w/Tomato, Basil & Ricotta

1 1/2 C Plum Tomatoes, chopped
1/4 C fresh Basil, chopped
1 T Red Onion, minced
1 clove Garlic, chopped
1/2 C part-skim Ricotta Cheese
1 T Olive Oil
Salt and freshly ground Black Pepper
1/2 # Pasta such as Rotelle, Ziti Or Penne, cooked al dente
Recipe
Combine the tomatoes, basil, onion, garlic. Stir in the ricotta, olive oil, salt and pepper to taste. Toss hot pasta with the sauce and serve at once with freshly grated Parmesan.
