    Peas and Macaroni (Pasta Piselli)

    List of Ingredients

    2 T Olive Oil
    1 Clove Garlic, chopped
    1 Sliced Medium Onion
    1 Can (8oz) Tomato Sauce
    1 Can (16 oz)Peas with Liquid
    1/2 t Oregano
    1/2 # Elbow macaroni or Ditalini
    S & P, to taste
    Parmesan

    Recipe

    Saute Onion and in Olive Oil in a 2 quart pot until Onions are translucent, then add Garlic & continue sauteeing until it begins to brown.
    Add Tomato Sauce S & P, and 5 C Water. Bring to boil; simmer 10 minutes, then add Peas & Oregano. Cook another 5 minutes or until mixture comes to a boil.
    Add the pasta and salt to taste. Stir and cook until pasta is tender.
    You may have to add more hot water if the pasta is absorbing all of the liquid in the Soup.
    Serve topped with Chopped Parsley and Grated Parmesan.
    Serves 2-4.
