    Spinach Gnocchi

    List of Ingredients




    10 oz Bag Fresh Spinach, washed & stemmed
    2 # Potatoes
    1 Beaten Egg
    1 1/2 C Flour

    Recipe



    Steam Spinach, then cool and chop fine.
    Pare potatoes, then steam until tender. Drain well.
    Puree, then add spinach and blend well.
    Place in bowl, add egg and 1 C flour, adding more if needed. Dough should be firm yet soft.
    Mold 1 t on a spoon. Roll gently in hands, then place on floured board.
    Press with floured fork.
    Drop into rapidly boiling water and cook until they float.
    Drain and serve with Marinara or a Parmesan Cream Sauce.
    Serves 6.
