    2 T dry yeast
    1/4 C warm water
    1 1/2 C warm milk
    1/2 C sugar
    1 t salt
    2 eggs
    1/3 C shortening
    5 C, or more, all-purpose flour

    Creamy KK Butter Glaze
    1/2 C unsalted butter
    2 C confectioners’ sugar
    1 1/2 t pure vanilla extract
    4-6 T hot water

    Oil or shortening for frying (shortening is more authentic but even worse on your health)

    In a large mixing bowl, whisk together the water and yeast briefly. Stir in the milk, sugar, salt, eggs and blend. Add in the shortening and most of flour and blend. Then attach a dough hook, and knead on slow speed only until smooth (do not over knead).Form the dough into a mass and cover in a greased bowl and let rise 50-60 minutes.Turn dough out onto a lightly floured surface. Roll to 1/2 inch thick and using a doughnut cutter, cut into doughnuts (each doughnut should weigh just under 2 ounces, raw dough).Cover lightly with plastic and let rise 20-40 minutes.Heat vegetable oil or shortening in a fryer (or wok) to 350 F. Slide a few doughnuts in at a time and fry about 1 minute per side.Remove from oil onto a baking sheet lined with parchment paper.For the glaze, melt the butter and then whisk it, in a medium bowl, with the confectioners sugar, vanilla and hot water. Smear doughnuts into glaze.Let set, smear again.For chocolate glaze, add 1 ounce melted chocolate into glaze.Makes about 36 medium doughnuts (also makes a lot of doughnut holes)
