Coffee & Cream Chiffon Pie

Vanilla Wafer Crust:
1 1/2 C finely crushed vanilla wafers (36 wafers)
6 T butter OR margarine, melted
Pie:
1/3C sugar
3 T instant coffee crystals
1 envelope unflavored gelatin
1/4 t salt
1 1/2 C milk
2 slightly beaten egg yolks
1 te vanilla
2 egg whites
1/4 C sugar
1/2 C whipping cream
Recipe
Crust:
In mixing bowl combine crushed vanilla wafers and the melted butter OR margarine.
Press mixture onto bottom and sides of 9 inch pie plate. Chill.
Filling:
In saucepan mix 1/3 C sugar, coffee crystals, gelatin, and salt. Stir in milk and egg yolks. Cook and stir till slightly thickened; remove from heat. Stir in vanilla; pour into large bowl.
Chill to the consistency of corn syrup stirring occasionally.
Immediately beat egg whites till soft peaks form. Add 1/4 cup sugar, beating till stiff peaks form. When gelatin is the consistency of unbeaten egg whites (partially set), fold in stiff beaten egg whites.
Whip cream till soft peaks form; fold into gelatin mixture. Chill till mixture mounds when spooned. Chill several hours till set. Cover; chill to store.
